Nawlins Chicken and Andouille Sausage JAMBALAYA
2 Tbsp Vegetable Oil
1 Tbl Blackened Seasoning
1 Lb Andouille Sausage (or your fav)
1 Lb. Boneless Thigh (cubed)
1 Lg Onion, Green and Red Peppers, 4 Stalk Celery ALL diced med
24 oz can Diced Tomatoes
4 oz. Chopped Garlic
1 Tbl. Oregano, Basil
1 tsp. Thyme
1/2 gal. Chicken Stock
2 1/2 c. Parboiled Rice
Sautee off your Boneless thighs, add Andouille for 5 minutes. Add all the vegetables and garlic. Cook till vegetables are 1/2 done. Add all seasonings, tomatoes and Stock... Bring to a boil and then add parboiled rice.
Stir occasionally but not too much. Just to keep from sticking. Turn to a light simmer and cook till rice and liquid come together. Sit for 10 minutes and prepare to serve.
** Always can make hotter with different peppers or lighter with no Cajun Seasoning just Salt and Pepper.
